The nose, crushed strawberry, jasmine and Mediterranean allusions. The wine rides along a vein of skinsy crunch and further textural detail following a fermentation kicked off by wild yeast, partly in barrel, some of it new. 2017 Heathcote Shiraz
WHOLE BUNCH – Hand picked fruit is tipped directly into open ferment vessels, with no crushing, de-stemming or pumping.
HEATHCOTE – An ideal region for Shiraz with rich red soils and hard Cambrian rock.
SHIRAZ – A soft, silky style as a result of whole bunch fermentation and partial aging in French oak barrels.

2017 Hilltops Shiraz
WHOLE BERRY – Fruit is picked as only berries with a selective harvester and delivered to the winery. No de-stemming or crushing takes place.
HILLTOPS – A cool climate, NSW vineyard with a strong heritage for quality was selected for this wine.
SHIRAZ – A spicy, violet and plush fruit style. Good intensity and length with a silky pepper finish.
